Franciacorta Damae
The Franciacorta Damae It is an authentic expression of the territory, made with a careful selection of Chardonnay (90%) and Pinot Blanc (10%) grapes, coming from three vineyards located in the municipalities representing the vocational units of Franciacorta.
The vines, with an average age of 20 years, are grown with breeding systems Guyot, Spurred Cordon and Sylvoz, ensuring a density of 5,000 plants per hectare and a surrender of 65 hl/ha.
The harvest takes place by hand, with a careful selection of the grapes and transport in small boxes, starting from the second week of August. After harvesting, the grapes are subjected to a soft pressing, followed by fermentation in steel tanks at a controlled temperature of 16°C.
The base wines, vinified separately depending on the vineyard they come from, are then expertly assembled to create a harmonious and balanced cuvée. The wine refines on the lees in the bottle for a minimum of 21 months, in cellars at a constant temperature of 12-15°C, developing elegance, complexity and structure.
With an alcohol content of 12.5% vol. And zero dosage, The Franciacorta Damae It presents itself with a straw yellow color with golden reflections, a fine and persistent perlage and a structure savoury and harmonious.
On the nose they emerge hints of bread crust and yeast, enriched with delicate notes of citrus fruits and dried fruit, including almond, hazelnut and dried figs.
