Franciacorta Cuvée 21

The CUVÉE21 Brut Vintage 2021 born from the union of Chardonnay (70%) and Pinot Blanc (30%), a blend that best expresses the complexity and elegance of Franciacorta. The grapes come from three vineyards located in the municipalities representing the vocational units of Franciacorta, selected for their ability to give the wine balance and finesse.
The vines, with an average age of 20 years, are raised according to the systems Guyot, Spurred Cordon and Sylvoz, with a planting density of 5,000 plants per hectare and a surrender of 65 hl/ha.
The harvest takes place by hand, with a careful selection of the grapes and transport in small boxes, starting from the second week of August. After harvesting, the grapes are subjected to a soft pressing, followed by fermentation in steel tanks at a controlled temperature of 16°C.
The base wines, vinified separately according to their origin, are then assembled with mastery to create a harmonious and balanced cuvée. The refinement takes place on the lees in the bottle for at least 36 months, in cellars at a constant temperature of 12-15°C, a long period that gives the wine aromatic depth and great structure.
With an alcohol content of 12.5% vol. and a dosage of 3.6 g/l, The CUVÉE21 Brut Vintage 2021 It presents itself with a straw yellow color with golden reflections, a fine and persistent perlage and a taste savoury and enveloping.
It releases on the nose hints of bread crust and yeast, combined with elegant notes of citrus fruits and dried fruit as almond, hazelnut and dried figs, which enhance its complexity.
Thanks to its structure and versatility, the CUVÉE21 Brut Vintage 2021 It is perfect when paired with fish dishes, lake fish, risottos and fresh cheeses. Also try with red meat, for a surprising and refined tasting experience.
